Chicka I had the stomach thing for about 10 days.Take care, I wasn't on very much either.

Fell out of a tree holding a chain saw:eek:.Thank God he wasn't hurt worse than he was.

Anybody ever made crock pot Lasagne? It spoiled me. I don't think I have made an oven baked Lasagne for ages but make the crock pot one fairly regularly.
 
I'm sorry I've missed so much. Trying to keep up. I've been sick over week.
Sick on my stomach, dizzy spells and swollen sinuses.
I'll try to do better.

I was in a car wreck and broke three ribs and my breast bone. No fun.
Oh Chick, just take care of yourself. I know sinus problems are no fun. Feel better!:hugsi was really lucky my last wreck i was in my old truck, got hit broadside at 55! I was not hurt at all thanks to that truck. I still miss that truck!

Please share your directions? I love lasagna but I'm just me and making a normal one takes just too long (for me). Yes, I know I can freeze portions, but they never taste as good after freezing (to me).

Cap, I don't know about you or others, but I'll take my truck over one of the current little sardine can cars any day. My truck is just a basic 1/2 ton 4x4, but it can take a heck of a lot more than any of the little cars on the road today.

Sorry all you folks who are feeling under the weather, and speaking of weather, it's that time of year when it'll be cold then hot, wet then dry... perfect weather to get sick. Take care of yourselves! rest, vitamins (Extra C especially), and enjoy fall (while it lasts)! Y'all know what comes next...

My wreck was in a truck and the front and the engine was in my lap. The steering wheel did all the damage to my chest and broke off my front teeth and split my lip.

Wrecks hurt! So do broke ribs!

Wow, that sounds scary! I think i will wait about 60 years to have another car crash. I try to stay out here in the woods as much as possible.

Since we are moving closer to empty nest status, I picked up a book titled The Complete Cooking for two Cookbook

Classic Lasagna

Sauce
1 tbl olive oile
1 Small onion, chopped fine
Salt and pepper to taste
2 garlic cloves, minced
8 oz meatloaf mix
2 tbl heavy cream
1 (14.5oz) can diced tomatoes, drained
1\4 cup juiced retained
1 (8oz) can tomato sauce

Filling, noodles, and cheese
1 ounces (1/2 Cup) whole-mild of part-skim ricotta cheese
1 ounce Parmesan cheese, grated (1/2 cup) plus 2 tbl, grated
3 tbl chopped fresh basil
1 large egg, lightly beaten
1/8 tsp salt
1/8 tsp pepper
4 no-boil lasagna noodles
4 oz whole-milk mozzarella cheese, shredded (1 cup)

1. For the sauce: Adjust oven rack to middle position and heat oven to 400 degrees. Heat oil in large saucepan over medium heat until shimmering. Add onion and 1/8 teaspoon salt and cook until softened, about 5 min. Stir in garlic and cook until fragrant, about 30 seconds. Stir in Meatloaf mix and cook, breaking up meat with wooden spoon, until no longer pink, about 2 minutes.
2. Stir in cream, bring to a simmer and cook until liquid evaporates, about 2 minutes. Stir in tomatoes anf reserved juice and tomato sauce. Bring to simmer and cook until favors are blended, about 2 minutes. Season with salt and pepper to taste
3. For the filling, noodles and cheese: Combine ricotta, 1/2 cup Parmesan, basil, egg, salt and pepper in bowl
4. Spread 1/2 cup sauce over bottom of loaf pan, avoiding large chunks of meatloaf mix. Lay 1 noodle in pan, spread one-third of ricotta mixture over noodle, sprinkle with 1/4 cup mozzarella, and top with 1/2 cup sauce; repeat layering 2 more times. Lay remaining noodle in pan and top with remaining sauce, remaining 1/4 cup mozzarella and remaining 2 tablespoons Parmesan
5. Cover pan tightly with aluminum foil that has been sprayed with vegetable oil spray. Bake until sauce bubbles lightly around edges, 24 to 30 minutes. Remove foil and continue to bake until hot throughout and cheese is browned in spots, about 10 minutes. Let cool for 20 minutes before serving
