we use bamboo jammed through the pig then a charcoal fire. The pig is stuffed with lemongrass and pepper leaves and cooked slowly.

Sounds good.

We wrap the pig in tons of foil and bury it and roast is for ever. Then you take it out and eat.
I love cooking a ham in the ground for thanksgiving also. We lay in in the floor on foil and pour a bunch of pineapple and brown sugar over it and as you wrap it you can add more pineapple juice. And it is the best ham I ever ate!

Thank you, but I think I need to stand by the fire and dry out a bit first. It's icky and damp out. Poor chickens. Haven't they the sense to come in out of the rain? Brought them out some apple peels earlier...DH is dehydrating again. I wish he'd get around to drying my oregano. Course I can't complain...he is baking up a batch of biscuits, and DD is making a spaghetti bake. I'm drying off and watching the Braves. I am so not domesticated...hate housework, which is ok since DH and DD are both OCD and they'd just have to redo everything I did anyway, and I'm not really fond of cooking. I can cook, but don't reallly like it, especially when they are stressing aout how big a mess I'm making. In my house DH cooks and cleans and I watch the sports. Anyhoo, I think I'm done dripping now.

Hmm... I guess you aren't in the north. Generally can't find our ground (let alone dig into it) at Thanksgiving.

Around here, you often can't dig a hole deep enough to bury a pig without it filling up with water. Pig pickings are strictly above-ground affairs.

I understand. DH and I were using the gas post hole digger to build our run for the chickens and hit water alot of water, we had to fill the hole with concrete to keep the run from flooding. I told DH we need a smoker.
