NOthing like turkey leftovers!! We eat turkey all year long. Roast once overnight and eat all week. Yum.
Arielle, want to give me a step by step on that overnight turkey? I have never done a turkey, myself........
 
Maybe you need to just retire now LOL! Our kids are grown and gone too, scattered across the country. Do we miss them? Not really. Only one, hopefully he will be here for Christmas, been a couple of years. One has been to visit, but he is a pain, a real pity party, the other has never visited, but can go to Disney every year. Kinda sad, but it's okay. We can do what we want and don't have to worry about the house being clean or entertaining. DH is ill anyway and we need our peace and quiet. Our animals are our babies now. And don't worry too much about the empty nest syndrome, grandkids will be along before you know it.

Actually, I enjoy the time that they are in school. THe few hours that I can relax and not worry about what they are doing. Like a mini vaca. I want to follow the european family values = kids live at home for a long time.

As challenging as these years are with too much laundry, and playdates and 2 soccer practices and 2 games a week, I love the afterschool time with my kids and even enjoy the summer weeks with them, until they are ready to kill each other of course. I'm hoping they both want to live with me forever. I can't get my stuff done but WTH, when they are teenagers and can drive I'm sure not going to see them much. Maybe I won't let them borrow the car!

TOO funny, OMG, LMAO! Isn't it also funny what different feelings we have about "the empty nest" syndrome? Surely we can't be that scared of ourselves? Oh, well, to each her own, many countries live with several generations under one roof, but it's not for us. Couldn't wait for them to fall from the nest and make their own ways. Love 'em all, but distance makes the heart grow fonder here.

My oldest is only 10 and we are having a big party for him tomorrow. I enjoy my kids. I hope they have a better relationship with me than I had with my mother. THey still tell me all their secrets. I am both grandma and mom.

My mother still tells me about living in a triple decker with family on all 3 floors. Nice stories about Nana, and Cousin Betty. When they had enough wealth, they all bought nice new houses. Not sure where Nana lived after that--she had 7 children to live with. Her oldest daughter is still alive at 105.

I don't want to become old and set in my ways, not saying any one is, just saying I don't want to become like that as I know how my MIL in law is after 25 years of living alone. Her way or the highway, even in my own house. Doesn't go over well with me. SHeesh. ( I like my MIL.)

Man, I just read through all of those posts of...cooking...turkey, pea soup! I looove pea soup. Need that recepie now!

You all made me hungry, and it's after 9. Bread! Are you kidding me? I am a bread lover.

Leftovers. yes. Much better..lasagna, chilie, speghattie..and now that our last son is leaving..(empty nest syndrome) I do a lot of that cooking up something that will last a few days. Works out well.
I like making the chickne noodle soup..lasts a couple of days.
Of course, putting a pot roast in the crock pot with some potatoes, and carrots works well. Can you tell I'm living in the West?

Well, my son will be gone next month. Can't believe we had one at our age when we did, but soo glad we did. He's one of those, "easy" ones if you know what I mean. Hasn't given us hardly any guff at all. Very good kid. And I'm not just saying that because he's mine. <3
 
Sarah's Easy split Pea Soup (modified from a recipe from Allrecipes)

1 lb dried split peas
6-8 C chicken broth
cut up carrots
Olive Oil
Minced Garlic (I use pre packaged)
Onion (I only had dried, minced)
McCormick Vegetable Supreme Buttery Herb seasoning.
Salt and Pepper to taste
Shredded cheese for garnish (cheddar is yummy!)
Crusty bread and butter to go with it


Lightly brown minced garlic and onion in olive oil in bottom of soup pot. Add broth and peas (after picking through and rinsing them). Cut up carrots and add. Simmer over low heat for an hour or more, or as long as it takes for the peas to soften, stirring every 15 min or so. You can puree the pees in a blender to make them soft sooner, but I like to cook them for a long time. I seasoned with McCormick but use whatever suits you.

*Feel free to add a ham hock, ham, chicken, or sausage. Potatoes would be good, too.

*Directions said to only cook the peas for half an hour, but this was not nearly enough time, in my opinion. I ended up cooking this soup for several hours over low heat. The peas started falling apart and really thickened the soup up nicely.

I used generic 'brands' of peas, minced onions, and broth.
 
I wonder if pea soup is a regional thing. I've never tasted it, seen it, been served it, etc. I absolutely love bread, but I like butter with it, unfortunately!

Well my question is, is it really that different to you making sacrifices so they can be in little league or girl scouts? This brings you joy so your family should join you in your new hobby. My husband who really didn't understand the chicken world has now bitten him lol, it bit him when I brought home this Banny family, mom with 5 babies and the dad he is so colorful and beautiful, and now he is looking at what type of chickens he wants of his own!!! Way to go girls, lol
