Hey! This gives me an idea! Would you all be interested in a Christmas swap, just on this thread? I have never participated in a swap, much less hosted one but it sounds like fun to me. What do you all think? We could do homemade food, or other homemade items, or gift baskets, or ornaments, or seeds or........well, you get the idea! We could do a secret pal type thing or even gag gifts! How fun!

Post here if you are interested and then we can decide what to do based on the number of participants.

Wisher--so relieved that the pup will pull thru and is on the mend. Great nursing on your part for sure. Seems like every pet gets a $1000 pass on vet bills. When you are up to it, love to see puppy pictures. ANd now that you are well bonded, training will be easier.

Here's the pie recipe:


COCONUT CUSTARD PIE


1 (9-inch) unbaked pastry shell
1 c. flaked coconut, divided
4 eggs
1 (14 oz.) can sweetened condensed milk (NOT evaporated milk)
1 1/4 c. hot water
1 tsp. vanilla extract
1/4 tsp. salt
1/8 tsp. ground nutmeg


Preheat oven to 425 degrees. Toast 1/2 cup coconut; set aside. Bake
pastry shell 8 minutes; cool slightly. Meanwhile, in medium mixing bowl,
beat eggs. Add sweetened condensed milk, water, vanilla, salt and
nutmeg; mix well. Stir in 1/2 cup coconut. Pour into prepared
pastry shell. Sprinkle with toasted coconut. Bake 10 minutes. Reduce
oven temperature to 350 degrees; continue baking 25 to 30 minutes or
until knife inserted near center comes out clean. Cool. Chill, if desired.
Refrigerate leftovers. Makes one 9-inch pie.

THere was a time I would have eaten this WHOLE pie. Loved sweetened condensed milk. Delicious pie.

Ha -- I know what you mean, but so far I've only had one piece. My husband, aka Mr. Metabolism, is as thin as a rail. Not that life is fair

. That's another discussion. I hadn't made a dessert in quite a while. A couple of nights ago he said, "I guess I'll have to have graham crackers for dessert." That was my cue to make something and I'm trying to use our eggs. Then I realized we didn't have much milk and found this recipe that uses the condensed milk. It's a keeper.

My chickens are getting cabin fever, staring out at the puddles and rain.

It's not as bad as it seems. I was very nervous the first few times but have gotten used to it now. My biggest complaint is that it takes forever, time-wise.

Most of the stuff that I like to make can be waterbath canned. Glad I have the pressure one though, for things like stock.

I like it better than water bath canning. My pressure canner is smaller and the pressure method uses less water, so it comes to a boil faster. I'm going to use it for water bath canning of jams, jellies, and pickles from now on. My water bath canner has been sent to the attic to stay.
