Can I pop in to add my 2cents. Like the others said, I use older eggs for boiling. If I have to use new eggs I dump a bunch of salt in the water before I boil. Its possible that's an old wives tale. Sometimes it works better than others.

Scalloped Potatoes with Ham

A ham slice is cut up and cooked with potatoes. An easy recipe for scalloped potatoes, and more recipes below.

INGREDIENTS:

  • 1 pound fully cooked ham slice, 1/2-inch thick
  • 5 cup thinly sliced potatoes
  • 1 can (10 1/2 ounces) cream of mushroom soup or cream of celery soup
  • 1/4 cup milk
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • dash pepper
  • 2 tablespoons butter
  • 1 cup shredded Cheddar cheese, optional
PREPARATION:

Directions for scalloped potatoes
Cut ham in bite-size cubes. Place half of the potatoes in a greased, shallow, 2-quart baking dish. Cover with ham pieces. Top with remaining potatoes. Combine soup with milk, onion, green bell pepper, and ground black pepper; pour over potatoes. Dot with butter. Cover with foil and bake at 350° for 1 hour. Remove covering; bake 30 to 45 minutes longer, or until potatoes are done. If desired, sprinkle shredded Cheddar cheese over the top of scalloped potatoes the last 15 minutes of baking time.
Scalloped potatoes serves 6.

For the cream of mushroom soup I use this and add 8 oz of chopped fried mushrooms. You can do the same thing with Celery or etc.

Just came back from the Rheumy. All of my labs came back normal which I guess is what they were looking for since they said it shows I'm responding to anti-inflammatory treatment. They still suspect gout though so they are starting me on Allopurinol, and sent me home with antibiotics and steroids for the tail end of the flu. I take the antibiotics now and save the steroids.

So I'm pretty happy. At the end of this visit I have Osteoarthritis, Osteoporosis, Osteopenia, Gout, Serum negative RA and Ankylosing Spondylitis....but I'm not in bad shape for the shape I'm in and the PA described me as being a pretty healthy person all things considered....
