The Old Folks Home

For what it's worth, my frozen egg experiment has worked pretty well. Back in late summer when we were still getting a ton of eggs I scrambled a bunch and then filled up ice cube trays with them, froze them, popped them out and into a ziplock or foodsaver and popped in freezer. Note: use Pam on the trays first or you'll hate yourself.
I have used a few so far on days when we're low on eggs, and I can't really taste a difference. I do still mix a real egg or two in it, but it really saves eggs when they're critically low.
I do plan to try it without real egg mixers, but it just looks lumpy and icky, so I haven't gotten up the nerve yet.
I will definitely do this again next summer.

He almost never leaves. Except for summer vacation....:)
Good time to build!

Miss Piggy (the little snot) is still in the basement.
So she's doing OK?

That is one reason I like the silicone muffin cups for freezing "slightly mixed" eggs. Just peel the cup off the frozen egg, pop the egg in a freezer bag. I tried ice cube trays but couldn't find any that would hold more than half an egg per hole. One muffin cup = 1 egg.

Yes, she's made a full recovery. I'm not fully convinced she was sick, although both BF and I thought she was on death's door. Took her a few days to stop shivering and looking listless, but then she perked right up. She got mealworms today and was clucking happily.
The little snot.

Love the idea of the muffin cups, I'll have to try that. You're right about the trays holding half an egg. I use a silicon bread pan for pouring soap when I make it, makes it slide out nice and easy.
