Everything that still needs doing to prep for snow just isn't going to get done, sigh. Hubby and I over the years just sort of split who does what without thinking about it. I am struggling to write down for him all the stuff I always did for the gardens, plants and animals without really even thinking about it, now the temps have dropped and our first real snow is due tomorrow night. I should be running around outside right now picking up, covering up, sealing up and storing away.

I love the fall! I am a northerner like you. There is just something so very satisfying about the last minute prep for winter. All the work, all the hustle, even the stress, then being able to sit down with your cup of coffee, stare out the window and watch the beauty of the first snowfall and know all the "stuff", the plants and the critters are all safe and tucked in.
The reality of the hard, cold, long nights ahead will sink in later, but for now, just that moment, you can sit back and enjoy a job and a season, well done.

Not being able to participate in that is really hitting me harder than I thought it would. Sitting in this stupid wheelchair and staring out the window is breaking my heart.

That is exceedingly difficult. Maybe lots more chocolate? Maybe it is time for a roll about in the yard. If hubby says no, throw a fit.

Stove is gas but I get the idea... I have tried this. and failed miserably. Either I burn the rice or it sticks so badly to the pot i had to throw it out.

Funny thing though I can cook rice in a skillet. Just not boiled in a pot. there is a product here called Rice A Roni. I have cooked that before. So when I failed at boiling rice I cooked it in a skillet.

Melt butter in the skillet then throw the rice in to coat and keep cooking till the rice kind of cracks and cooks that way. Then add in liquid like chicken broth and cook till the liquid is gone and add more liquid.... stirring it in.... cook till the liquid is gone.... and on till it fluffs up.

But Steamed or boiled rice.... Um no.

When you add your rice to boiling water, stir and cover and turn to low simmer for 20 min. This is what I learned and I have burned many a pot, so this works. Check it a few min before ready and if all the water is gone and it's still not done, lower heat again and add a few tbls of water and cover for a few more min. My mom did not teach me to cook so we had instant rice forever. The idea of simmering beans, rice, etc was new to me and I kept drying out and burning.

You have to keep the doors and screens shut because it draws flies.... Big Green ones. ONce its done simmering.... At least a couple of hours she poured off the water and let it cool..... Now the real work starts. It has to be cut into strips about an inch and a half wide with a sharp knife or cooking shears. Then you season it and roll it in corn meal. then you drop it into bacon grease.... And fry it till the ouside is golden brown. Then you let it sit to cool again.... Main course You eat it like jerkey because its still a little tough...

Yep Mom could burn the same pot of beans TWICE.... She said the trick was to not scrape the pot when you transfer..... I cant tell you what she did to fish..... and she loves it that way. My older sister used to make tripe for her husband. His mom taught her how. A LOT of work. They divorced later and I don't know if that was the reason or not.

I make minute rice most of the time and it comes out perfect if I make regular rice it is all sticky and I do have to add a tiny bit of water before it gets done.

Tomorrow I am going to make some Beef and Chicken enchilladas with some spanish rice and refried beans I love mexican food but I have never made enchilladas. I bought some green and red chili enchillada sauce and some green chilli's. Wish me luck.

In the morning I have to put some eggs in LD a bunch of the game fowl eggs were clear so 4 go into LD and as they hatch I have 4 more going into LD and then as they hatch some Chanties go into LD.
