Our little 8-lb bird made for a hearty meal and then was picked apart for 18 turkey tamales (filling is turkey, roasted green chiles, chipotle powder, jack cheese.) The remaining carcass will be soup tomorrow!
Had my favorite breakfast of pumpkin pie and coffee. Life is good!

You ever make em with pineapple raisins and Guava nectar or Mango nectar as the stuffing.... I so want to try making those.

Any dried fruit bites works instead of the raisins.


I bet a little dab of cream cheese would be awesome.... I know its not a mexican ingredient....

I have made dessert tamales before. The masa mix is sweetened and really good with pineapple inside and a chocolate drizzle with toasted coconut or crushed macadamia nuts outside. I've seen the slabs of guava and mango at the Hispanic market..... I never bought it before, but it might be worth a try to see how the stuff works as a filling.
 
Tamales look and sound yummy. I love tamales. Have never made them. Don't know how. And im spoiled. Many a Hispanic coworker has made them. :drool

One of the owners of the hot air balloon company was out on his beach trying to burn a pile of limbs and such one spring and it wasn't burning very well but it was burning. He went and got a gas can a poured gas on it. The wind picked up alittle and he was on fire before he it. He rolled in the sand. And then walked up to his house and got a hose cooled himself down and called 911. He spent weeks in the burn unit. He had been wearing nylon windbreaker type jacket. they said he was lucky to be alive. He is very thankful. By the time rescue got there he was sitting out front waiting in shock. He had been alone at the time of the incident. Later he said he knew better but just didn't think a little bit if he shook it so it wasn't a stream would flare up.
