Not a gumbo fan but never have had authentic..... I will always give it a go. Same goes for Crawfish.... I will always eat it hoping for someone to prepare it a way that I care for.....

But I eat just about anything that comes from the ocean.... With the exception of endangered fish.... if I know of it.

I get my fish fix at the local sushi restaurant.... Favs there are Yellow Tail, Mackerel, Uni, crab, oysters, eel and occasionally Salmon Eggs.

Oh and Yellow tail collar grilled over charcoal. Yummmmmy.

While I will eat catfish Not a fan if I have another fish to choose from. Same goes for Tilapia.... Even though I plan on raising Tilapia for food one day. The Tilapia we get in the stores I am not sure where it comes from. I got a little wierd over it when I found out a bunch of it comes from China.... or Vietnam... I feel the same about Shrimp.... and I LOVE shrimp. but I found out a bunch of it comes from Vietnam.

and I dont care how well its grown and certified healthy... I just prefer to have what is available and not traveled thousands of miles to get here....

I am certain Gumbo recipes vary from region to region.... town to town and family to family thats why I keep hoping I will find one I like.

Same goes for Mexican food.... Region to Region town to town family to family.... I love the ones that serve alot of fish... All the seaonings and cooking styles. Lots of Seafood soups too.

I dated a Mexican Fellow once whos family was from Guadalajara.... His momma made Mole Poblano once for Sunday brunch... OMG was that good... But I have never had one I liked since... And I know Mole sauce has as many iterations as there are people in Mexico....

Deb: I totally agree about buying imported seafood. I was surprised to see shrimp from vietnam in walmart...
The thing about crawfish is that most people dont purge them to get the poop out of the intestine. It makes a big difference...
I love love love sushi. Its expensive around here tho. And not very popular..
 
I had pet crawfish as a kid.... One of them was named Houdini

I set up a crawfish vivarium for my son when he was about five. Poured in play sand in a hard sided kiddie swimming pool made little dunes and everything then we poured in water that had been declorinated and put in about five crawfish what an interesting project.

We found out the Crawfish like to get out of the water now and then and dig caves to hide in during the day. we found foot prints all over the sand dunes and little half caves dug in the damp parts.

We fed them fish pellets and little bits of fish from dinner occasionally. Its a good thing to do for little kids before they get jaded about stuff like that.
