I thought it was delicious. It is greasy like people say but I found it delicious. The plucking, however, was very difficult. My hands and fingers were hurting and I was close to giving up. And yes, you need to be worried about the incompatibility of boy ducks and girl chickens. I didn't find duck eggs particularly hard to hatch. I didn't do anything different than with chicken or turkey eggs except let them "cook" a week longer. Some spray them with water once or twice a day during incubation, but I didn't. They are wicked cute coming out.





Apparently I hatched them with a bunch of chicken eggs in there (based upon the picture). I raised them in their own brooder (chicks in a separate brooder) with a "diaper" (chux pad) to reduce the mess. They are messy. I brought them to the bathtub every day so they could swim around while I cleaned their diaper/shavings. Then I had to bleach the tub.

Do you add soap to your water when you scald the feathers off... Because I was expecting plucking the duck to be a heck of a lot harder than it turned out to be... could've took me more than 15 minutes.. I did have a hard time with the flight feathers though...

I do, yes. It was really cold out (I've plucked chickens in the cold without a problem) and I kept dunking the bird back in the water.
 
It helps break down the oils/grease on the feathers. You can see a chicken using their oil gland at the base of their tail when the groom. And ducks are very oily to prevent their feathers from getting wet in the water.

Hehehe! Saw some for Christmas that were similar. Will see if I can find them again.

Yep when I want to learn how to can I am getting on a canning site. deb
I love canning. I can help some of you need anything. Have done jams, juice, fish, soup....yum yum!!
