Except I thought that custard = egg... And that not all cheese cake was a custard.... Is it always cooked in water?

But cheesecake is NOT about the egg... It is about the cheese. That I DO know... Because I am brilliant. Yep, brilliant and powerful.

Pumpkin pie
and
Pecan pie

It has to do with the ratio of Egg to other ingredients.

Dont have to be cooked in water bath but best resurlts ....

Actually, you can make a cheesecake without cheese even. I don't know if you can call it a cheesecake anymore, but quark is a good substitute for cheese. Usually, I go with about a pound of philly cheese, a pound of quark, and an egg per gill of other filling. But you can substitute all the philly with quark too, and just add loads of sugar, people won't notice. It's better with the philly though. And then you can make cheesecake without egg too, using gelatin. Those don't need to go in the oven, and are pretty tasty usually too.

Now I remember... The kids made a cheesecake with gelatin AND egg. It was not cooked... Just out in fridge.


And I think a cheesecake made with quark is sill a cheesecake since quark is a dairy product.

And Fins eat quark? How widespread is quark? Ok, ok, I know that it is easily spreadable....
 
Sure Finns eat quark. We eat most dairy products. Along with being the #1 in per capita coffee consumption in the world, we are also the top per capita dairy consumers in the world (latest data from 2007). Sweden comes pretty close though. But Finns consume about a liter of milk (in some form) per person per day. If you're interested in the coffee consumption, I think it was something like 12 kilos annually. So that's about a pound per two weeks per person.

i have bought several dozen store eggs lately


Old freezer Salmon does well with a cream sauce. However yes, all Salmon loves dill.

We haven't had to buy eggs in a couple years and that was only for a month.
We did have to eat cereal yesterday morning instead of the normal 2 eggs each.
I have 7 pullets that should have started laying a couple months ago. Just the olive egger started about 2 weeks ago. Any day now the nest should be full.

The only quark I'm familiar with is the atomic elementary particle that makes up protons and neutrons.

I assume we are eating those types of quarks, but I'm certain that's not exactly what we're talking about.
