Kathy give Topeko a try some time if its on the menu. Flying fish eggs/roe.... Super sweet lots of flavor comes in red Black and green.... I only like the red because the black is died with soy and the green is dyed with Freaking WASABi....![]()
My favorite Oysters these days are Oyster shooters.... SErved in a shot glass with Ponzu sauce a drop of tobasco ginger and scallions on top and smelt roe as a garnish. Place I go to is buy two get one free.

I think your oysters over Cali way are a tad bit bigger, than our eastern oysters.
