Ditto what @penny1960 said. Hope everyone stays safe. We are going into a rainy spell which I have to admit we do need the rain badly. Our main pond is down about two feet and could use topping off before it freezes over. But 10 inches of rain in a months time is a bit extreme.

I think the big plan for our weekend is to continue the fall cleaning. At some point in time I just have to pull myself up the stairs to the attic and start sorting through the boxes we stuffed up there when we retired 4 years ago...almost 5 years now. I mean, how long can you logically wait after saying.....'let's put them up in the attic and we can sort them out later'.....before later is NOW!? I opened one tote the other day and said, crap, so that's where that went!

Funny thing is that I slapped the lid back on the tote and went back downstairs.

Okay, I admit it. I'm the queen of procrastination!
 
I just bought a turkey for Thanks giving.... smallest one ever at ten pounds... going to do some pre prep.... Home made Cranberry sauce, I want to butter fly the turk... Make it so I can flatten it out and crisp up all the skin. Then lay the turk over the top of the dressing.... for cooking...

I can thaw it Butterfly it and refreeze... Flattened out... It only takes a few minutes longer to cook a frozen turkey......

Then I can take all the "bits" and make stock for gravy... Heck I can even make the gravy in advance...

What I want to do is have every thing ready to assemble on TDay no mess no fuss.

I believe that's referred to as "spatchcocking" with a chicken... split it down the backbone then spread it open and "squish" it flat to cook it... Suppose it would be called the same thing for a turkey... :confused: Maybe just cut the entire backbone out along the rib cage then use that for stock... My fave part is the dark meat :drool Well, OK, that and the nice, crispy, seasoned, salty, greasy, skin! :love :drool

I actually still have several smaller turkey's in the freezer from last Thanksgiving. (I buy them on sale) and have been thinking all day about pulling one out. Think I will gosh darn it!
