She was gluten free for less than a month before they told her to eat is again for the tests. She was doing much better on the no gluten diet

Son 2 is celiac... no one else in the family is. :hu

It took 6 weeks of gluten free (and being crazy strict gluten free), before his gut fully healed.

Once his gut was fully healed we haven't had to be quite so crazy about cross contamination.

But... inexpensive cereals stamped "gluten free" lie. The least expensive cereal that IS truly gluten free is Chex. (There is a wheat chex, but the chex stamped gluten free are gluten free. My kid likes the Honey Nut one).

We haven't had an issue with regular corn tortillas, or corn chips. He eats lots of that, and lots of rice.

I prefer cooking stuff that never wanted flour in the first place over using the various replace stuff.

We make lots of cornbread and spoon bread. Those recipies usually ask for 1/2 wheat flour and 1/2 corn. We use 1/2 Masa flour and one half regular corn flour and it ends up perfect.

No one else seems to have celiac disease yet in the family but you never know!
 
When we make pie we make a large ramekin with zero crust full of the pie filling. Then we use a regular gluten full crust in a pie pan with the rest of the pie filling.

Lots of pies are gluten free, we like pumpkin, pecan, apple, etc.

But other favorites are flourless chocolate cake, chocolate souffle, rice pudding, and fruit crisp.

Paying for the certified gluten free oats is best... oats tend to get contaminated somehow. :hu And so for the crisp... or other oats for the celiac child, we use the certified gluten free oats.

Meranges are also easy to make gluten free.

Yep, interesting issue.

It sucked when we first found out.

But we found out maybe 13 years ago now .... so now it is easy.

Before we knew... he was allergic to LOTS of stuff. Got really sick from dairy... etc.

But after keeping him gluten free, his gut healed up and he is allergic to nothing!!!

Also, he has learned lots of fun gluten free Asian cooking, and smoothies, etc...

Well... he is now 18.... so no trouble.

Also, even in our tiny town, so much gluten free stuff is now for sale!! It makes life super easy.

Not all organic is gluten free.... it takes awhile to get the hang of the label reading.

My DD has the allergies and milk intolerance too! Also eczema which is a symptom also
