Purslane provides six times more vitamin E than spinach and seven times more beta carotene than carrots. It’s also rich in vitamin C, magnesium, riboflavin, potassium and phosphorus.
I weeded and threw it away for yrs, before I knew what it was. Now I plant my garden, and when I weed, I weed around it leave it alone. It doesn't cause any probs in the garden cause it's such a low growing plant with very shallow roots. Taste's great cooked like spinach with a little lemon juice. Raw it's good too about the same, very crunchy and never tough no matter how big or old it gets even the stalks when big are still crunchy and tender.WOW!!! I had no idea it was so good for you!!
