unless you have a better idea, black tea is recommended. Once it's done and pulled from the booch incubator, you can add juice to suit.
I use several different teas in my mix. It's all decaf: black, green, lemon-ginger herb, and ginger. I've been using this for about 3 years, and oh, man, is it good. Sometimes I add cherry juice when I bottle.

Ohhhhhhhh, I wondered about the ginger part. Guess I can just get flavored tea and do it that way.
Have you read about taking out only a quarter of the brew and adding back in fresh sweetened tea to keep it going. Takes only a few days for a fresh batch to be ready. I'm going to try and drain off half and replenish, so I don't have to start from scratch with a small amount of started and the scobe. What you take out you can then flavor with juice or herbs, etc.

Is that like the continual brew process? You never empty the crock, and add some sweetened tea to replace how much you take.

I would sooo get into that, except I do a secondary ferment when I bottle. I either add 1/4 cup cherry juice, or 4 raisins and a small piece of fresh ginger. The sugar in the cherry juice and the raisins feed the yeast that's in the tea so that they make a little more CO2 to add some more fizz.

When I bottle and add the stuff, I put the bottles in a room-temp, dark place to sit for 3-4 days. If you do one bottle in an emptied, cleaned out plastic pop bottle (soda bottle, if you say soda and not pop), you can tell when the fizz is right. The plastic bottle will get firmer, and after 3-4 days, it will feel like an unopened bottle of pop.
