The Old Folks Home

It snowed all day here. Not heavy and no wind, just nice snow and the temps were low 30s so we made a snowman. Silly me didn't take a picture as I made the bottom which is the hardest to do and told hubby he can do the rest and I went in the house to rest lol.

At least we finished putting the greenhouse tarp on the kennel next to the coop before we did that. Hubby makes them paths in the snow so they can still free range but they liked their new sun room. I'll have to get a picture of that too. Gosh I'm a slacker!
I got the pictures. That snowman really bites this year. I'll never let hubby finish it again. I at least picked the leaves off the bottom one.

The kennel is 8x20 and isn't a run, but just a secure place off the coop we've put hens with new chicks for their first few days, but last year I suggested we cover it in plastic and make it a "sunroom" for in the winter. Hubby put some heavy plastic on it, and almost all winter I could let them out even in sub-zero temps as it got warmer in there even though it's bordering a forest on the right side and a coop on the left. Because that plastic wasn't UV protective, this summer it completely fell apart, so I bought a 14 ml greenhouse tarp. That should hold up now!

In our whole county there's one little "neighborhood" Walmart in our one, nearly vacant shopping mall in (county seat) Eureka, across the aisle from our DMV office. You know your mall is at death's door when the rent's so cheap, government agencies are moving in to save money on leases. But there's still a Target and a Costco (neither located in the mall), so I guess that's still civilization...

Nearest Home Depot is in the one county north of us before you hit the Oregon border.
One of the Walmart neighbor hood stores in in the old Mall-- Used to be a Mervyns. The other one is in an old Rite Aid store.

There is talk of the rest of the Mall becoming some type of Housing.

It looks about the same as the other recipes. The result has the wrong texture and flavor, but I have some ideas about why that I'll test in later batches.
If you have sourdough starter, I have a very good recipe for that. They are very tasty!

English muffins

1 envelope yeast
1 tsp. salt
1/4 C. warm water
1 C. starter
2 Tbl. yellow cornmeal
3/4 C. buttermilk
2 to 3 C. flour
1/4 C. cornmeal

Sprinkle yeast over water. Set aside to soften 5 Minutes. Cover a large baking sheet with waxed paper. Sprinkle with 1 Tbl. cornmeal; set aside.

In a large bowl, stir together flour, 1/4 C. cornmeal, and salt; Set aside. In a medium bowl, combine starter, buttermilk and yeast mixture. Stir into flour mixture until well blended. Knead 5 to 8 minutes, adding flour if necessary until smooth and elastic. Roll out dough to 3/8 to 1/2 inch thick. Cut muffins with a 3" biscuit cutter or drinking glass. Arrange on baking sheet. Sprinkle with remaining cornmeal. Cover with cloth; let raise 45 minutes. or until doubled. Cook on medium heat in a slightly greased griddle. Turning often, cook raised muffins on medium hot griddle about 30 minutes. Cool on a rack. Serve warm or cold. Makes 12 to 14 muffins.

Start kneading with 2 cups of flour and add more as needed.

Sorry. Should've just said it to begin with lol two things. One is I'm gonna potentially be getting ACCS which is like a more wraparound service where I'd have a team of a few different people/specialists or whatever and meet more like once a week instead of once a month like with case management. That's good. And two and the part I am unsure about is I've been offered a spot in their outpatient clinic. So all my care would be in one place and would be coordinated. Sounds great, right? Except I LOVE my current therapist and provider. I FINALLY found a great one after trying a few. So I'm hesitant. But the care there at DMH is supposed to be even better and I would be dealing with actual professionals who tend to stay instead of constant rotating interns like I've been and still am dealing with. My current therapist is an intern so WILL leave at some point. And my case manager tried to reach out to my prescriber this last hospitalization and he never got back to her. If I switched, she could just go knock on their door. 🤣 everything is telling me this is better but I'm hesitant because I love my providers. 😭😭😭 I DID tell her to submit it though. It won't be immediate anyway and I'm sure the spot won't be available long. And my dad thinks it's a great idea. But shoot.

Good morning Old Folks we are still muddy going to have allot more rain.
Same here, showery all day (almost 3pm now). We're up to 4.5" since Friday, most of it falling on Saturday, and another big wave of rain predicted starting Tuesday night. I've been waiting for it to let up a bit before ducking out to tend the girls and gather eggs; they are not best pleased, hunkered down in their covered run and grumpily looking out at the rain...except the 2 Easter Eggers who poke & scratch in the open air outer run unless it's pouring heavily. They're up on the straw bale scratching around now as I gaze out the window...
