I don't know what you're OE mix is but I've also been pleasantly surprised by my non-olive laying OEs (ie the rest of the single combed girls). They lay a very nice dark brown, so dark, its hard to tell the difference between my Marans and my brown-laying OEs. Not olive, but still a nice addition to the egg basket!
I hope she lays soon! I'm supposed to get a BCM pullet in a few days from someone, but I don't want it if this one lays dark eggs! I can only have so many chickens, so I am wanting 1 of each color egg-layer. I have a barred rock who gives us a pretty pink egg every day, one EE (who I think is a real brown/red ameraucana) who lays a beautiful aqua blue egg, one EE who lays a light green egg, our brahma will eventually give us medium brown eggs, and we have an EE/american gamefowl mutt chicken who should start laying any time now and we have no idea what she'll give us, but she does have a total pea comb so we are expecting it'll be of a blue variety. If my OE doesn't lay olive green eggs, I'm going to have to find another one somewhere & I won't need a BCM if this one lays dark brown eggs.

Oh, the parentage of these OEs is ameraucana x penedesenca, covered with a BCM roo. They were hatched from Wynette's eggs.
Let me look back, but I'm pretty sure that's the same parentage of my OEs, also from Wynette. I'll get you a photo this evening. All three of my non-olive laying OEs lay dark brown speckled eggs, so I'd say its likely yours will lay the same. They really are very nice and consistent! They've hardly missed a day since they started laying a month or so back. I think you'll be pleased.
