I do not think they outright covered it in the show yet,
but the gold eyes are the result of the mutagens given during the trial of grasses that turns you into a witcher. All witchers have base yellow eyes. As to other changes in color or physical appearance, it's the potions. They haven't really gone deeply into them in the tv series other than showing Geralt taking them, and Triss mixing them at Kaer Morhen, but the potions, oils, and elixirs are part of a witcher's arsenal and enhance their abilities in various different ways. Cat enhances their ability to see in the dark (big pupils). Swallow increases the rate at which the witcher's body heals. Black blood causes a witcher's blood to be toxic to vampires and necrophages ( various blood suckers), causing burns when they get bitten. Etc, etc... They also take a physical toll on witchers in the form of what's essentially toxic shock to their systems (they're depicting it with the greying skin and blackening veins in the series). Witchers also have healing potions to counteract those, as well as their bodies enhanced self-healing. Potions allow them to do their jobs, but are their own double-edged swords.

Yep, that was all covered in the "between season background cartoon series/movie". It's called Nightmare of the Wolf. I don't think they named the potions, but I feel like I heard their names somewhere else, and I've only ever seen the Netflix stuff.

Yeah they do cover the trial in NOTW.
