I think you got in to big a hurry to help. They can stay pipped for a long time before they zip, I've had them pip and take 36 hrs to start zipping. During this time they are absorbing the yolk.
By removing the top of the shell like you have done will make them start drying in the egg. They will basically get super glued inside the egg, no matter what your humidity is at with that much of the egg opened they start drying. If you help them the rest of the way they might not have the yolk absorbed yet and most times die.
Congrats on your birds starting to hatch. Is this your first hatch??? My one big piece of advice is to be patient!!! A lot has to happen inside that egg for the chick to hatch..... If I can see the chick breathing and see the beak I know it is getting oxygen and I leave it alone..... and check back every few hours or so to see if any progress has been made.... At 24 hours if they have made no progress since forming the hole then I carefully peel back a little bit of shell to reveal the beak......
How far along had it been when you started to help??? What day are you on??? What is your humidity?? What kind of chicks are you hatching? Often you will notice a very small pip and then NOTHING for hours and hours and hours ..... SIT ON YOUR HANDS..... You can do more harm then good by intervening too soon and you can also put your other soon to hatch eggs at risk of shrink wrapping.... If I do help I just clear enough to see the beak is out and make sure the membrane is moist and then I put them back in the bator to let them hatch themselves.... I check on them every hour or so to see if they are making progress as I find that once we help them, the membrane is more likely to dry out b/c the way we crack the egg leaves more of it exposed to the circulating air.... and then the chick gets stuck. If the chick is shrink wrapped it is easy to tell.... then you need to add drops of warm water to moisten the membrane. The other thing that can happen is your chicks can grow to big to move in their shells and not be able to zip out.....
Good luck and remember be patient!!!
