I grow lemon thyme, very good on herb roasted fish. Now you have me thinking of a tea made with it. For the fish I lay flounder fillets on a baking sheet and brush them with melted butter mixed with lemon thyme, basil, and scallions with some black pepper. Then fire it on the grill at max heat say 600 for 10-12 minutes.

Does anybody know when Thyme is 'ripe' on here?
Like when you could pick it and use it...

One more question...(For now!)...
Can you use Thyme even when it has flowers?
