tip for seperating yolks , especially if you freeze your extra eggs for later on and have to do a lo

So do tell,,,how did your grannny do it? I was thinking to freeze eggs in icecube trays so to be able to count out what I needed. Any one ever do this
 
Grandma always did hers pouring the egg back and forth between the halves of the shell. When I try this, I always end up breaking a yolk. I just use my fingers now...pour the egg into my hand and let the white slide between my fingers into the bowl. It's a tad messy but works well for me...besides I like to get up close and personal with my food, LOL

I've never tried freezing eggs, but I do dehydrate them. They come out great for cooking. Where I can, I like to dehydrate things as it takes up so much less room in the freezer!
 
I hadnt thought about dehydrating, but sounds intriguing. I have a small food dehydrator, would that be usable or do you use an oven? Curious to know. If you have time to shareI would love to hear. How do you measure for baking etc?

I use my regular dehydrator. I scramble the eggs first...not too dry, then spread them on the trays and dry 'em. Easy peasy. We didn't have enough of the plastic mats with the small square holes to go over all our trays and they were so expensive. Brilliant DH found the plastic embroidery stuff at WalMart which is really cheap...and he cut them to fit...tada!

When the eggs are dry you could run 'em thru the food processor to powder them but I just put them in a heavy plastic bag and break them up by hand. 1 tablespoon and 1/4 c water equals 1 large egg. They don't re-hydrate all that well, but they're excellent to use for baking!
