Tis Time for a March 2020 Hatch-a-long!

We harvested a 2 year old rooster and my MIL tried roasting it (thought she knew to boil since it was an older rooster). She said it reeked. My husband also agreed, I didn’t visit that day so I can’t say. I have a 9 month old rooster in my fridge tenderizing that I will be boiling low and slow, but I’m scared to have my house smell horrendous how my husband described. I just didn’t know if all roosters were like that or just old ones or what.

Instead of boiling which is cooking it fast. I would crock pot cook it in some marinade and spices and let it go all day until dinner time. Then pull it off the bone and make it into whatever you want. I usually do chicken and dumplings or chicken enchiladas or stew.

I keep hearing chirps from my incubator. Hope that last one hatches soon so I can check the rest with no pips

Never had one smell bad while cooking and I've done a lot of roosters, including mature ones. I almost never process females. Something was probably wrong with that particular rooster. I leave them in the fridge a day or 2 before freezing. Simmering should be ok if you don't want to put it in the crock pot.

I really wish all you chicken processing masters lived closer to me. I need some hands on training. Lol

That would be incredible! Depending on when you do it I might even be able to bring you an "offering". Lol
