To skin or pluck a goose???

Getting time to harvest some of our geese. Do most people pluck? We prefer to skin since we debone anyway. Our geese are Chinese Brown. Couple days ago butchered four of our nineteen. The breast meat was sooo could fixed like a rare steak. Tender my wife used a soy sauce and garlic marinade she ate hers raw mine I flashed at high heat. It reminded us of elk steaks taste was same to us.
 
I tried plucking one of the geese a butchered and I ended up having to skin the goose bc the feathers were very hard to to pull out.
 
I always pluck. The skin is my favorite part, always so flavorful. I dunk and swirl the birds in hot water (between 150 and 160 degrees) for a couple minutes and the feathers slip right out, no problem.
