To trim or to Remove Spurs?

I'm not sure how different they are, but I'd go with trimming because that's the only one I know for sure is humane (I know nothing about removing so forgive me :p) Like fingernails, they will grow back eventually but should solve the problem for now.
 
There are many methods online but I would be careful. Cutting them can make them bleed a lot. I cute the very tip off of my roosters spur and he bled. I don’t cut them. I wrap them in gorilla tape (like gorilla glue, but it’s the tape version) and if they get too pointy I file the ends just to blunt them.
 
For remove I have heard that you can stick baked potato onto his spurs and then leave it on for such and such a time and then pull it off. Twist his spurs and they’ll pop right off, leaving the soft new spur underneath. This spur will be blunt so you don’t have to worry. Also very small. Keep him inside for a few days to give the new spur a little time to harden up sit that it won’t get infected or injured. If he seems in pain you can use neosporin.
This is not the exact method. Please research online how to do it and don’t go by my word because I heard about this a while ago and not in much detail. I wouldn’t want to hurt your rooster!
