Tomato confit

Bought a copy of The French Laundry Cookbook last week. This is my first baby step on making one of the preparations. Peel and quarter tomatoes, salt, pepper, thyme and olive oil and roast for 2 hours in a 250 degree oven. Plan to use these as a garnish on green beans for dinner. Also seeing if I can get a better quality photo with my camera as opposed to the Blackberry.

Leftovers for lunch today. I toasted a biscuit in some butter and spread the tomato confit on it and topped with a little fresh basil. Very tasty. Intense tomato flavor.

I am craving some roasted tomatoes and basil with garlic. Mmm... this is on my TRY list!!!
