Trying a new diet and was wondering,?

Oils that contain a healthy ratio of monounsaturated fats include olive oil, canola oil , peanut oil, sunflower oil, hazelnut oil, safflower oil.

We use olive oil and organic canola oil. We spefically buy organic canola oil to be sure we're getting a GM-free product. More on that available here:

We avoid vegetable oil.
 
I used to keep extra virgin olive oil for all uses that called for olive oil. But recently I got a "lighter in flavor" olive oil (Bertolli's extra light tasting olive oil) for most of my cooking needs and keep the EVOO for making salad dressings or seasoned oil for bread dipping. By brushing the oil on the pan surface before I saute, I use less oil than if I just poured it from the bottle. I also use the Bertolli oil brushed on baking dishes or in the Nesco roaster oven to prevent sticking. Those silicone brushes are wonderful for this as they are much easier to clean than bristle brushes.

I was gifted with an oil container and silicone brush similar to this one and really enjoy using it. No brush bristles on your food!

Use Rice Bran Oil - while Olive Oil is healthy, it has a really low smoke point and I find it just doesn't fry things the way I want.

I have used olive oil for years, only EVOO, though cause that is expeller pressed and from the first press. As you get into the "light" olive oils and the ones just labeled olive oil, those too can be extracted with the help of chemicals.
In the last few months I have also started using Grapseed oil. Grapeseed oil is another heart healthy oil. It has half the saturated fat of olive oil, more poly unsaturated fats in it and a MUCH higher smoke point. You can deep fry in GSO and it is flavor free... unless you buy one of the fabulous flavor infused oils that Wildtree sells. I LOVE the Roasted Garlic one and others swear by the butter flavor (the get the butter flavor from Coconut!)
Check out this site to learn more about Grapeseed oil http://www.mywildtree.com/valentine you can find some grapeseed oil in the grocery store too, but I KNOW that Wildtree's grapeseed oil is expeller pressed ONLY from seeds leftover from winemaking and I don't know how those other oils are extracted, plus I like the flavored options
