turkey face changes colour

My friend has just got 2 turkeys that living happily with her chickens she noticed that when they eat their faces change colour does anyone know why this happens thanks in advance

When I had my YoYo his head changed colors according to his mode. I just thought of his head as a big mood ring.

Don't know if anyone knows what color means what though?
