I was wondering if turkey raisers out there in Louisiana, where I am, are processing your own turkeys or where are you having them processed? If you are selling to others, are you processing thrm yourself and if so how and when do you process them and what do you wrap them in? If everyone wants to pick them up fresh the day before Thanksgiving, are you iceing them down after you process until they pick them up or do you have a commercial cooler? Are you brining them for your customers, or do they do that for themselves? Will you tell me the nuts and bolts of your operation? Thanks in advance!
