I had heard that-- figured to can older birds and that would make them tender.  I remember eating venison, loved it but it was like shoe leather!! 

DO you add salt when canning meat?


Yes, I always added salt. It 's been a few years but I think that I would pack the jars with raw meat, tightly, add water to just cover and added salt. I'd have to research how long in a pressure canner. Yummy! No shoe leather there. Just to cook venison in a fry pan is almost nasty unless you do it just right. We also like making breakfast sausage with venison. Hot sausage is good too. Didn't care much for sweet sausage.

I think I'd have kept Chuck if it hadn't been for the tiny kids. It was mating season and that's why I think he was aggressive.
 
Hi everyone. Its been awhile since ive posted but heres an update on my first turkeys. Out of six eggs that hatched in febuary four poults survived their first week. Suprisingly i had 1 tom and 3 hens. On a sad note i noticed my tom was acting odd yesterday so i isolated him and the hens. I couldnt stay and keep watch due to work. When i got home i found out he had died. The hens are perfectly fine just not happy being caged up again.


This is them on july 9th.

Sausages are very personal. Flavor must be just right.  Game animals don't seem like sweet sausage potential--herbs or spicy perhaps but not sweet.


I always cheat and add ground up fresh pork butt with it. Adds the needed fat. Felt guilty not adding that. lol
 
Thanks, but if anyone knows someone who has blue eyed White Hollands and is going to the ABA national in december please contact me. I'd like to talk with them about possibly bringing a spare tom that i could buy. That or ill need to get on a waiting list for eggs.
 
Been a long time since I posted too. I posted months ago that my BR hen was not laying. She is about 4 years old I think. She layed about six eggs her first year, fewer the second year and one this year. She is molting right now so I know she is done. She was originally sold to me as a male and I think she is a bit of both. My RP male is about three years old. He has always been a sweetheart. So big and beautiful that we have people come just to look at him. For the past couple of weeks he has been getting really cranky. He attacked me yesterday for the first time. I didnt let him get by with it even with the bruised let I got. I knocked him down and got a piece of work and kept jabbing him in the chest with it while I scolded him. He ran away but this morning he acted like he was going to attack again, but I was watching and kicked his chest to get him to back up. I don't understand why this is happening so suddenly. And I don't like it one bit!
