I had heard that-- figured to can older birds and that would make them tender. I remember eating venison, loved it but it was like shoe leather!!
DO you add salt when canning meat?
Yes, I always added salt. It 's been a few years but I think that I would pack the jars with raw meat, tightly, add water to just cover and added salt. I'd have to research how long in a pressure canner. Yummy! No shoe leather there. Just to cook venison in a fry pan is almost nasty unless you do it just right. We also like making breakfast sausage with venison. Hot sausage is good too. Didn't care much for sweet sausage.
I think I'd have kept Chuck if it hadn't been for the tiny kids. It was mating season and that's why I think he was aggressive.
