I woke up thinking about pickled eggs. I may pickle my guinea eggs.
THis would be the only reason to have bantams, me thinks. Pickled bamtam eggs are h'orderves. I did try the eggs. NOt sure what to think. THey are vinegary all the way thru; and the pickling spice lends an unusual flavor, not a dill flavor at all. I ate a whole jar in just a few days.

THis recipe calls for 12 extra large eggs-- I can't fit 12 eggs in a 1 qt jar-- maybe my eggs are bigger than I realized. lol

We are 144 miles and 2.5 hours apart. I am in Bush, LA, which is about 24 miles NE of the North Shore of Lake Pontchartrain.

The only time I get over into your "neck of the woods" is when we take our daughter to Ragin Cajun Softball camp in Lafayette during the summer. I am pretty much a home body and don't even make it as far as New Orleans or Baton Rouge more than a couple times a year.
Sounds like you are close to my part of the start, since I am just over 2 hours from Kuntrygirl, and about 5 miles north of Hammond, just off I-55. I will be picking up a spring lamb from Kuntrygirl, when it is time and if I can bridge the gap for you two, I would be glad to?
Great advice about selling the turkeys and eggs!

You are lucky your geese only police your ducks. Here, they are the morality patrol that watches EVERYONE for infractions. Nothing...not duck, nor chicken, nor squirrel is allowed to mate in their presence. If they continue after being "warned" they get physically yanked off the damsel in distress and the geese save the day.
My Brown African Geese are noisy, but very gentle. They do not stop the ducks from mating, but if the 3rd drake tries to mate with the same duck at the same time, they will intervene. Our female dog will do the same thing if the hens put up a fuss. It seems like all the roosters want to mate with the same hen at the same time. I don't know why, when they have 200 other hens to mate with?

The only pickled eggs I have ever eaten, were made with Quail eggs !
THe girls should start laying this spring--- just up to them as to the exact dates.

I always take all the eggs and either sell them or incubate them, because hand raising make for gentler turkeys and they tend to stay closer to home. Mine stay home, without, even fencing the property. I had 5 turkeys laying, then a few days ago they slacked off to 2 or 3 eggs a day, and even though they just stand up when I reach under them for the eggs and sit right down again, two days ago I only got 2 eggs, yesterday only one and today, only 2 again. Three turkey hens are just sitting on the nests most all day, and let the chickens just join in, to lay their eggs, then the turkey hens will roll the chicken eggs under them, but not lay an egg at all. Well, this just will not do at all, so I put about a dozen or so eggs into each of their nests, today. They immediately pulled the eggs under themselves and sat back down. One of them gave me a little hiss, sound, but still accepted the chicken eggs. I figure 21 days to hatch chicken eggs was better than forever to hatch non-exiting turkey eggs, I just wish the rest of the 13 Holland White turkey hens would start laying! A few hatched out mid summer, last year, so they won't be 9 months old for another month, Holland Whites start laying at 9 months old, here, but what surprises me is that my 2 older hens, that laid in February last year, have not started laying yet ? The weather turned cold again yesterday, went below 32 degrees last night and is raining today, so it will get warmer tomorrow. I wonder, what do they know, that I don't? I will be a happy girl, when they are all laying and I can fill my orders faster. I also need turkey eggs for the egg swaps, so,

Turkeys are hatching!! Four are out so far and 8 more have externally pipped. They are two days early ... weird. Temp is staying at 98° and humidity is at 64% by adding 2 sponges under the screen. They have all weighed between 60 and 62 grams. Excited!!! And as I was typing this two more have started zipping.

Just curious, WHat does everyone use to incubate? I have a Hovabator 1588 which I love so far. My DH bought me a second incubator for valentines day to use as a hatcher, a Farm innovators 4200 pro series. I felt bad telling him but I dont really like it and want another hovabator... I think I may order one today and hope it gets here in time. But What do you all use?
 
kuntrygirl, If you could would you add me to your wait list too? I would rather hatch out eggs from someone I "know" rather than take a chance on a live bird locally. My hen needs a boyfriend but she will just have to wait until he grows up. ;)

I'm glad I"m not the only one with a refirgertor full of eggs. I've started feeding 3 a day to the dog as well as me. And I keep looking for more egg recipes!!  I have a batch of picked eggs in the refirg as a test trial. HOping they are really good. HOping. Hoping Hoping.

I don't like the "vinegary" taste. I LOVE the taste of pickled beets, so I would want my pickled eggs to taste like pickled beets. I guess I could use the pickled juice from a jar of beets and put the eggs in there. Do you think that would work?:idunno
