turning eggs

how many times a day are you supposed to turn eggs in an incubator? or at what hour intervals?

Three times a day. About every 8 hours I would say. Or more practically - Once in the morning when you get up. Once when you get home from work. One last time before bed.

You can turn more than three but I have heard it should always be an odd number of times.

I believe the reasoning for odd number of turns is this: Normally after the last turn at night is when the eggs spend the longest period without turning, so you want them to alternate sides each night.
