Anyone have a good turtle soup recipe?
Processed the snapping turtle we caught last week, and ended up with about 4lbs+ of bone in meat. I'm brining it now, figure I'll make some sort of soup tomorrow or the next day. I'm not sure how I want to cook it up, found recipes online, but figured I'd see if anyone here had one they like
(And before anyone says anything, yes MI has a snapping turtle "season" (July 15-Sept 15), and yes this is a legal size turtle (over 13" shell), caught legally, while holding the appropriate licenses.)
I did put in in a clean barrel and fresh water daily for the last week, so it was pretty well cleaned out when we processed it, no smell.
Have to say, these things are creepy to process!
