Wow. No, I meant I wouldn't mind raising beef...but I don't want to raise a hog. I'd rather buy a side of pork. Mmmmm bacon....pulled pork...ribs...ham...sausage.

I had farm fresh bacon once and it tasted awful. Someone else said it must not have been cured right. I don't know, but I wasn't impressed. I do love good bacon.

BACON!! My folks used to cure/smoke their own bacon. It was awesome. I'm really wanting to try my hand at it now. The stuff you tried Amy must have had something wrong with it.

I like most everything pork except pork chops. For some reason I just don't care for them. If they're thin, battered and fried I can eat them, but that's it. Pulled pork, ribs, ham, sausage and bacon are great though.

That's what someone else told me- that it couldn't have been processed right. But I will say, if it doesn't taste like the store bought then it probably wouldn't taste right to me, because that's all I know.

Lol. My wife is the same way. She's slowly coming around though. A lot of store bought food has very little flavor (especially chicken) to me.

I have cured and smoked two bellies, but while good, it wasn't as good as what I buy from the smokehouse near the meat packers. If you tried the smokehouse bacon, Amy, you'd be a convert. Like store bought, but 3D flavor. I'll keep trying, but meanwhile I buy the good stuff.

Pulled pork, on the other hand...or sausage...I do make some really good stuff.

I've found some folks smoke their bellies too long. I don't like sweet bacon so I lower the sugar and up the pepper in the cure. Then cold smoke it for 4-6 hours depending on what I'm going for. The cure is the key as far as I'm concerned.

I love bacon. And ham. But not a sausage fan. I had some wild hogs wipe out an acre of sweet corn in less than 48 hours, a couple of years ago. A couple weeks after that, they were just a few feet out my back door. I could hear them! Then I saw them... ugly critters. It was not hunting season, so I didn't have a rifle with me. I was so mad!

I do hunt for deer and turkey, and we eat what we kill. Now that I have hatched a turkey, its going to be a little more difficult for me to shoot one, maybe.
