Two year drought, just started laying?

I have an Americauna who is a little over three years. She layed her first year until her first molt and stopped laying.

No eggs for two years. I call her "the freeloader" and keep threatening to make her into broth and last week she started laying again.

What gives??? Has anyone had this experience before? Is this common with this breed?
 
My 8 year old home made Easter egger magically started laying again last year after quitting when she was about 6 years old, so it definitely happens. Mine laid about 12 before taking the rest of the season off. I didn't eat them, I fed them to the chickens. I wasn't too keen on eating old chicken eggs, even though they were freshly laid.
