Yes! You could! But it would take A LOT of years, literally more generations than humans have already existed. That's the trick of it. It's a VERY slow process.
But we can get a lot of variation even now. I mean, look and Shamo chickens and Dong Tao chickens and naked necks. Chickens aren't just cute and fluffy. All the pieces for being an upright predator are there.
