We have a light Sussex who is about 18 months old, happy and healthy.

Lately she has become unstable - ie if she scratches her face, she generally falls over, and often loses her balance when scratching, and has also started walking backwards a bit after scratching (bit hard to explain).

She’s eating, drinking, and laying an egg most days (although it is TINY compared to what she used to lay). She sleeps in the nesting box as I think she might fall off the roost or hurt herself getting off it.
We also think she is doing huge poos, there are none in the nesting box overnight so it would indicate it is her.

Bit worried about her instability!
She can (and will) run, Walk etc, it’s just scratching /sudden movements etc

Anything we can do to help?

(Background: she’s been broody quite a lot, but isn’t at the moment and hasn’t been for a while, she had a prolapse about October last year but recovered well)
 
She sounds like she's suffering from a neurological issue, either caused by exposure to a toxic substance or a vitamin deficiency. You can try B-complex and vitamin E 400iu with a sliver of selenium.

Avian viruses can produce these symptoms, too.
