Unusual Cake Recipe

Couldn't you use lard in place of the salt pork? Lard is pig fat. Salt pork is pig fat with salt added.

Exactly what I was thinking reading through the posts.

Kind of like "Mayonnaise Cake" - also known as Duke's Mayonnaise Cake or Duke's Chocolate Cake, but I can tell you my PA family has been making dark chocolate cakes with mayonnaise and cocoa since before the Great Depression and never heard of Duke's. Anyway, at first glance lots of people might think "yuk" about that as well.

People had to be creative "back on the day". I bet the cake recipe with salt pork works just fine, as is, no changes needed to have an acceptable cake.​
 
I was thinking the same thing Tammy! Mincemeat pie with flour added- I'm game, it looks pretty good to me.

But where do I find 100 year old pork?
