Just looked at your pictures again, What ever happened looks like it may have happened a while back and she has healed nicely. Again, if she is doing okay, I would just let her have a happy life.

Definitely never heard of a chicken missing their tongue before, but I wouldn't be super worried. I would keep a close eye on her and see if it bothers bothers her.
