So if somebody is producing 20,000 birds per year, they are required to be federally inspected. But what if somebody wants to sell under 20,000 in interstate commerce? In my state I would be exempt from the USDA, but I'm kinda at a disadvantage because my state adopted all of the USDA's requirements. However I do not need an inspector present for processing or label each bird. But if I have to comply to a USDA style then why not get federally inspected and open up my opportunities? Is there somebody here that has experience working with the feds? Are they more Lax towards small producers?
