I'm getting 10 eggs a day, which really isn't that much, but more than I can eat myself. My daughter will eat up a bunch, but the boy and the dad aren't so good about it since they don't like hard boiled eggs. I've tried the pickled eggs route, but the other option was a quiche. That went over really well at Mothers day. It was a carmelized onion and mushroom quiche, and was surprisingly sweet since there was no sugar in it. I think I used up 16 eggs with just the one dish. I have seen other quiches that call for something like 8 chicken eggs, basically omelettes in a pie crust.
On another note, have you seen this article: http://geniuscook.com/quail-eggs/
makes it seem like a little miracle food. I'm going to try the raw egg sometime soon, when I get some nori. I'm not sure I just want to slurp them down without a bit of something else. Although if I eat 5 a day, and my daughter was 5 a day, maybe we need more birds!
