Vegans of BYC!!

Pics
@Callender Girl I agree, though interesting the religious talk I am all for recipes and support from other vegans/vegetarian/or like minded individuals.

Tried a new cold brew recipe I saw on a talk show. Pumpkin flavored- use canned pumpkin, maple syrup and cream, which I substituted coconut cream for, pumpkin spice and a pink of salt. Blended it up, put in a cup and add cold brew to it. Adjust your cream to coffee ratio to meet your taste preference. Amazing! (1/2 c pumpkin, 1/2 c cream, 2Tbsp maple syrup, 2 tsp pumpkin spice)

That sounds absolutely amazing! Genuinely I have to try that. I havent tried anything like that yet.
I am really into iced coffees. I tried with soya cream, and wow!!! It's even better than with coconut or almond!

I'm trying not to waste at the moment, so whenever I use chickpeas, I use the water for something else. I like whisking it up until its a light airy liquid, then I add melted dark chocolate or chocolate powder (with added sugar or syrup), and mix thoroughly, it's really good as a milkshake! I want to be more adventurous and start making deserts with it though!

Today the plan is a smoothie for breakfast, huge salad and rice cakes for lunch and squash and homemade bread for dinner. You?
I'm thinking iced coffee and toast for breakfast, chickpea curry for lunch, and maybe leftovers for dinner. I think I still have some onion tarlets in the fridge!

Okay so here is a confession, today I _might_ try egg, as in real egg. Im just kind of curious, and am considering eating egg from time to time, in cakes, breakfasts etc.
My girls are producing more eggs than they want to eat, and my family just arent using them. It was utterly criminal how many went in the bin last month.
So I feel like its worth a taste test...

The thing is, it feels so.... icky, to me! And thats just ordinary eggs as I remember them. I've never even tried duck eggs. So... we'll see.

Well if you do try them, know that they will be from ladies who are well taken care of and loved! I eat the eggs from our chickens and I do not feel as if I am contradicting myself at all. If you don't like the taste of a plain egg, which some don't if they haven't eaten them growing up, then putting them in baked goods or dishes might be the way to go. I think that duck eggs are a bit more creamier/richer than chicken eggs. Good luck!

Let me echo what @WIchickMama said about how to incorporate eggs into your diet and in wishing you good luck!

I won't buy commercially produced eggs, but I also don't want to waste those little packages of protein that my girls provide, regardless of whether I eat them or throw them away. What is it that makes eggs "icky" to you? Is it the idea of eating something that comes out of the back end of a bird" The texture? The taste of eggs?

Today's breakfast will be eggs and toast, made with a vegan-but-pricey, whole grain bread.

Lunch and dinner will be leftover curried chickpeas for one meal, and leftover mushroom veggie soup for the other. I made both with coconut milk, my first times using it because I had it in my head that it would be too sweet. And, I was wrong.

Ive heard this too! Which sounds good as I really disliked the texture of store chicken eggs, growing up.
I'll let y'all know how it goes!

I agree with you, I dont think its a contradiction at all, especially when the birds don't even want their eggs. (I have to cook them scrambled or they wont even touch them. Even then, they wont finish one egg, let alone both).
But it sucks that we have to identify with a label that doesn't fit-- Just because it causes confusion.
Like I dont want to be called a vegetarian because my lifestyle is still vegan, so being a veggan is the closest, but still, I dont buy shop eggs.
I wouldn't want my family members and friends to buy me foods with egg in, for example.
So i think I effectively would still go with vegan, and then explain being a veggan if asked.
Gosh it's all way too confusing 🤣 I'm sure Im over complicating it.

I think it's only contradictory if you're the kind of vegan that thinks any animal product is horrible for you and should not be eaten. 😊

All three! I mean, I used to love egg yolks, and scrambled eggs, but if it were fried or poached, the texture and taste of the egg whites didn't appeal.
It never bothered me before, but now I've sat beside my ducks laying their eggs, it does feel kinda icky to eat something that came out of them lol. I think if I like the taste, I would be able to get over that, though.
If not, I'll probably use the excess eggs to make cakes and cookies, I would eat them, but I could also give them to family and friends. That would probably be a solution too.

That sounds yummy! I havent had a mushroom soup in ages!

I think dairy and meat arent great for you in a lot of aspects, meat is natural but has its downsides. Milk, definitely I see as strange---
but eggs are one of the things that I see as natural now. All kinds of animals eat eggs, and there are health benefits...

Thing is, some vegans would go nuts over something as small as this, eating your own hens eggs. As much as they want to believe it's wrong, I just don't believe my girls could care less, lol. That's why I let other people eat the eggs.
Same with sheep, like, if I rescued or kept sheep as pets (yes I would totally do that because sheep are awesome 🤣), depending on breed I would have to cut the wool. So, if I used that wool, would that make me exploiting and harming them? I don't think so. If I bred them for the wool and sold it, and then killed the sheep, I would see that as exploitation. But having an animal purely because you love em, and using whatever you can that they produce, I'm starting to see that this isn't exploitation.
