Vegetarian and/or vegan members of BYC!

I leave off the crust because I restrict carbs.

The key to the recipe is to slowly caramelize the onions. It really adds a great flavor.

Ingredients
Quail and/or duck eggs
heavy whipping cream
grated parmesan cheese
shredded mozzarella cheese
fresh spinach
red onions
portabella mushrooms
sea salt
pepper
butter


Instructions
Chop the stems off of the spinach. Cut spinach leaves in to small pieces. Wilt in butter on medium heat and set aside in a mixing bowl.
Dice red onion and cook in butter until caramelized. Add to the spinach. Do the same with the mushrooms...cook in butter and add to the spinach mix. (Use the same pan for all three and don't bother cleaning between ingredients...you want all those flavors in your mix.)

Break eggs in to a separate mixing bowl. Add heavy cream, salt and pepper and whip together. Put a little of the veggies in the bottom of each well greased pan and pour egg mix over the top.

While you can make this in a quiche pan, I use muffin or mini-muffin tins for hors d'oeuvres or easy to grab instant breakfast sized quiches. In each muffin cup you put a little of the vegetable mix, ladle some egg/cream over the top, then add some parm and mozzarella until the cup is almost full.

Bake at 350º until the edges are a little browned and the cheese is melted and bubbly. You can serve immediately or wrap in foil and freeze for later reheating. Even tastes good as leftovers.


Now, you may have noticed a lack of measurements. Well, I tend not to measure and adjust my recipe to use whatever I have on hand. This recipe is pretty forgiving. As long as you remember to caramelize the onions and use REAL BUTTER, you will get an excellent flavor.
 
Oooh, thanks for sharing! I love quiche, but for some reason buying it pre-made weirds me out. I'll have to try and make it myself, I'll bet it'll be more delicious that way!

Finally a possible use for my duck eggs, haha! They usually go to the crows.

This time, almost a year. When I was younger, for about 2 years.

2. Why did you choose to go vegetarian?

After reading Harvest for Hope by Jane Goodall, I knew I could no longer support the factory farming industry in good conscience.

3. Has raising and caring for poultry changed your opinion of farm animals, or helped affirm your vegetarian lifestyle?

I do eat eggs, but other than that, I always considered my chickens and goats to be pets.

4. What are some of your favorite foods

Beans, kale, soba noodles, brown rice, and CHOCOLATE.

I was watching a video last night..
anyways, the girl is vegetarian..she said she turned vegetarian after reading the book, Skinny B itch...
Its supposed to talk all about our food industry..etc... she said it really opened her eyes...
just thought i'd toss that book out there to you veggie heads

I'm partway through the Omnivore's Dilemma but haven't gotten a lot out of it yet.

Turkey for dinner tonight. My turkey that I raised humanely and harvested humanely.
 
I disagree with statements about plants not having cognitive ability. I personally feel we as a species do not truly understand the depth and complexity of all forms of life on this planet. I don't know if a 10 mile wide forest of aspen all interconnected with symbiotic relationships are a higher species than us or not. It is not my place to decide those things....Just the same as it is not my place to judge others reasons for enjoying vegetarian lifestyles.

Personally I would rather have a quiche any day of the week over Turkey. (PS we call it spinach pie not quiche,,, cause "real men don't eat quiche..)

I eat and crave vegetarian, because it makes my body feel good. Yes I do eat some meat and won't get into it here because this thread is about vegetarian eating... And I want to here some more good recipes
