Parmesan-Cheddar Squash Casserole...
■4 pounds yellow squash, sliced
■4 Tbsp. butter, divided
■1 large sweet onion, finely chopped
■2 garlic cloves, minced
■2 1/2 cups soft LOW CARB OR obmit breadcrumbs, divided
■1 1/2 cups shredded Parmesan cheese, divided
■2 cups (8 oz.) shredded Cheddar cheese
■1/2 cup chopped fresh chives
■1/2 cup minced fresh parsley
■1 cup sour cream
■1 tsp. salt
■1 tsp. pepper
■2 large eggs, lightly beaten
■1/4 tsp. garlic salt

Low Carb Caprese "Sandwich" my second fav!

and then there is cauliflower pizza and of course Zuchini fries!!!!!!!! I am hungry

Hi everyone! I'm Rhea and Vegan, my 5 boys are pecatarian and my hubby is a meat eater! LOL!! Thanks for this thread! I will post recipes also!

Certain classes of veg can eat eggs and cheese.

I decree we should each post more receipes!

Stir fry noodles aka American Pad Thai
1 pkg Ramon noodles (toss the seasoning)
water to cook ramon noodles

non stick spray
1 Tb seasame oil
1 Tb walnut oil
1 Tb (or much more!) chili oil
1 tsp red pepper/garlic paste (or more or less, I use about 4 Tb) I use spirachi - available in oriental food section of most grocery stores
1/2 c. unsalted peanuts (not raw)
3 c. raw spinach washed and dry
opt 1 c. bean sprouts
1 Tb red vine vineger
opt - a lime, quartered, to squeeze onto dish rist before eating


1. cook ramon noodles according to pkg directions, drain
2. Warm Seasame oil in pan to slight bubbles, but NOT to smoking hot
3. toss in ramon noodles, and cook until slighty sticky feeling (you may wish to add veggie oil if it "dries" up in pan a bit), turn down heat to med-low
3. when noodles are just sticky, add walnut oil, chili oil, hot pepper paste, and mix to coat noddles, add peanuts
4. Add spinach and bean sprouts, and stir JUST UNTIL SPINACH SLIGHTY WILTED turn off heat
5. Add red wine viniger, scrap bottem of pan (this will lift yumminess up with the noodles) and searve with lime quarters (squeeze juice over noodles)

(This is one of my favorite receipes ever! Try it with fresh vegan spring rolls!
