Vegetarian & Low Carb Recipes And Discussion

WZ, I found some Stevia at Trader Joes and it is the best alternative
sweetener I have ever tasted.


Today is day 7 of my low carb, minimal meat (nope, not all vegie), and
low sugar diet/lifestyle. My body feels different. I'm reserving judgement
until another week passes. I did go down one belt loop and even that
is loose.

Just make sure if you feel hungry, EAT SOMETHING... preferably something with good natural fats.

The biggest mistake people make is trying to cut calories at the same time they ditch sugars. It usually leads to disaster after about 2 weeks.

I, too, fell off the wagon a couple of times when the craving of sugar came on strong particularly my time of the month which I HAVE to have chocolate!

All week been struggling with the flu, drank elecrolites (yeah its BAD) for three days and a few crackers each day to "settle" my stomach. Now I am getting back in gear but exhausion is big, I'm just dragging my butt everywhere. No energy...maybe body telling me to slow down and REST and had not had any sleep for all that time without coughing. yesterday i used the neti pot for the first time, and felt my sinuses are clearing up but the ears are aching and back of head and neck is hurting.

So Wifezilla, any ideas or suggestions of eating while sick with cold or flu? Crackers seems to be the ones to settle the stomach better than going with meats and veggies which I tried it once and it did not settle in my stomach at all.

Now I am on the mend, gotta get back on the carb thing and luckily I didnt gain all that back LOL!
 
When I am sick I always go for soups.

Creamy chicken with broccoli and cauliflower (and REAL cream), Egg drop soup, beef and mushroom thickened with pumpkin, tropical seafood chowder.... Any of those really hit the spot.

This is sorta fun.
 
For 4th of July I covered some oranges in foil and threw them on the grill till their a golden color (they pop in your mouth) and then put them on some frozen vanilla yogurt, and melted some rasberry jam and chocolate in the microwave and stirred it drizzled it over the oranges and yogurt. Delicious.
 
Tomorrow, I have an all-day, Continuing Education thing at the local university, that I must attend to keep my professional license. They provide food all day, but none of it will be anything I can eat (box lunches, donuts, muffins, cookies, cookies, and more cookies).

I'm packing a lunch, but if anyone has any interesting snack suggestions for me, I'm all ears. I am getting sick of nuts. Nuts and cheese are my usual snack food.
 
85% cocoa chocolate bars
yogurt?

Will you have small cooler or lunch bag available?

Turkey roll ups
(thin sliced turkey meat with cream cheese filling)

Mozzarella salad in a zip lock bowl?
 
Mozz salad is a good idea, and I'd planned on rollups and a salad for lunch!

I can take a Mr. Bento or Mini Bento, those keep things hot or cold for a really long time.
