Wanted: "Authentic" (or just really yummy) Tamale Recipes

I need some recipes for tamales... I've always wanted to try making these, but I don't have a good recipe.

Anyone have any directions for a delicious filling? I'm open to all sorts of suggestions. Hints and tips on how to make them would be appreciated, too.

I'd suggest that you befriend a hispanic cook to help you out. I've heard that tamales are LOTS of work.

I'm curious to see what tips you get - I've been curious how to make them, too.

I was going to make some too. My DH LOVES them. After reading the recipe

to much work for me right now. Maybe a day when I'm not on call by my kids and DH.
