If your camera has a portrait mode, try shooting with that and with the lens zoomed out. It should make the camera do the same thing as adjusting the f-stop.
And know that most point and shoot cameras are NOT good at blurring the background like a DSLR camera can. That effect is called bokeh, BTW.
PS. If you have digital zoom, it's better to not use the digital zoom. Just zoom as far as you can with the optical zoom. Digital zooming kills the quality.
PPS. You can download something like Photoshop Elements 7.0 for a free months trial and learn to create bokeh in post processing if you are into that sort of thing.
