In order to qualify as real cheese or ice cream, there are minimums of other "stuff" like "hydrogenated vegetable oils" and such they can contain. If they exceed those limits, they are bumped down to "cheese food product" or "frozen dairy dessert." Even most Kraft cheese slices are actually "cheese food." That doesn't make them bad ... just not 100% cheese. I really didn't pay much attention to it until my sister married a dairy farmer. Now I read 'em all. I still use the "faker" products, but only when it doesn't make sense to use the high dollar real stuff ... and I DON'T tell my BIL!
