Has your doctor told you to keep a lid on meat/fat consumption? If not, I wouldn't worry about eating meat/fat. Ask her next time you go in. It doesn't take much to pile up 120 grams of carbohydrates. Are you tracking what you eat? My Fitness Pal is very good for that. The free version is fine. I'd pay for the free one if they charged, though. It's that helpful.I'd really rather not -- no offense. Also, too few carbs result in ketones -- and I hate those little things with a passion.
Carbs aren't as much of a problem as the *kind* of carbs you choose to eat. Highly refined carbs with fat are the worst; think doughnuts, ice cream, bread. It's not that you can never eat those things, but you have to watch them. Get the great bulk of your carbs from vegetables, minimizing starchy veggies like potatoes, sweet corn, peas... These are good for you, but they do raise your blood sugar more than (for example) broccoli, cauliflower, leafy greens, peppers & so on.
Meat is hard on the kidneys of people who have kidney disease, not on normal, healthy kidneys. If you have compromised kidneys along with the diabetes, you need to follow the diet your doctors prescribe for your various challenges, but if not, there's no need to be afraid of eating meat.
