Washing fresh eggs or not ?

I get that this post is on washing the eggs but I'm surprised no one has mentioned that the best protection against sickness is cooking the eggs....I don't wash eggs but I use a bit of sandpaper to remove stubborn dirt on the eggs I sell. The rest go in the fridge and we just make sure to cook them well. If you were making stuff like ice cream( A popular recipe in my area is cracking raw eggs in to make it thicker🤮 needless to say we don't make ours that way) I could understand washing them before using them.
Let me ask you this, what about a pickled egg? Sure they are boiled first, but how long can they last in a pickling brine do you think?
 
Does eggnog take raw eggs? I was gonna say that too but then I couldn't remember 😁 I've never had it. Just the thought of eating raw eggs makes me gag lol. Also I'm slightly lactose intolerant so eggnog hits a bunch of no's on my eat list😊

IMO, eggnog would be simulator to removing the yoke from and egg and beating the egg white to death. What do you have then? LOL

Love pickled eggs! Usually we make red beet eggs in the vinegar and beet juice. Umm, I guess it would depend on how strong your brine is..I really have no idea since we eat them so fast but since they are pickled they could last a long time. My grandmother makes them for Thanksgiving every year and she usually has some in her fridge for a month or so. But I'm sure they could last longer if the brine is strong enough.

Homemade pickled beet juice is my favorite right behind using yellow mustard in the egg brine. :celebrate

I've never tried that! How do you do it? Salt water and mustard or vinegar and mustard or just plain mustard?(imagining enough mustard to cover a dozen eggs😁)

I use plane Frenches Mustard from the jar. I dilute it with white vinegar first before adding the eggs. It will soak into the egg just like using beet juice. The longer they sit the better, that's why I always make two half gal. jars at a time. First jars don't last long! :gig
 
If I don't have any homemade beet pickle juice available for making pickles eggs. Mustard pickled eggs is my second and have yet to have anyone not like them. Not bragging....just saying! :D :celebrate
